This recipe is inspired by a recipe on paleorunningmomma.com (my favorite source for recipes!).
However, I'm a little bit more picky about the type of sweeteners I am willing to use so I tweaked it a touch. Frequently, I don't have the exact ingredients listed on her or other recipes so I mess around with what I do have. I'll do a full post on substitutions some day! But for now here is what I came up with yesterday and OH MAN are these delicious! Please, if you want to try them out the way the original recipe suggested check out the website above! You'll be overwhelmed by great ideas!
Lemon Sugar Cookie Recipe:
2 1/4 cups of almond flour
1/4 cup of tapioca starch
1/2 tsp of baking soda
couple pinches of Sea Salt
1/3 cup of ghee at room temp.
1/2 cup of monk fruit
1 large egg at room temp.
3.5 tbsps of lemon juice *
1 tsp of vanilla extract
*She had suggested 2 tsp of lemon zest and 1 tbsp of lemon juice, however I didn't have any fresh lemons so I just added extra lemon juice. The cookies are delicious but I think the lemon zest would make them even better.
Preheat your oven to 350 degrees Fahrenheit. Mix all your ingredients together. She mixed her dry ingredients and wet ingredients separately. I live in a camper, I don't have room for the extra dishes. So I just mixed it all together in the same bowl. Then place in the fridge for about 20 minutes.
Then make small balls out of the dough. I scooped it out with a soup spoon then shaped the dough into a ball. Place on parchment paper on your cookie sheet (easier than greasing). Press down in the center slightly. Bake for 10-12 minutes or until slightly golden. Let cool completely before frosting.
Strawberry Cream Cheese Frosting:
1/2 cup of raw soaked cashews (typically soak for at least 4 hours, but I poured boiling water over them and soaked for about 2 hours and it was fine).
3.5-4 tbsps of full fat coconut milk chilled (stirred as well)
1 tbsp of lemon juice
3/4 tbsp of coconut oil soild
3/4-1 tsp of vanilla
1 tbsp of honey
pinch of sea salt
3 frozen strawberries
Place all your ingredients in a food processor or high powered blender and blend until well mixed and you don't have any cashew chunks. I did everything but the strawberries, mixed that up well then added the strawberries.
frost your cookies before chilling the frosting. It's smoother and easier to spread. After all your cookies are frosted store in the fridge and the frosting will stick to the cookies better!
